My parents every year get us a subscription to Donna Hay Magazine [actually it’s my Husband’s birthday gift – but not sure who enjoys it more : ) ] … There isn’t an issue that arrives that something isn’t made from the pages within days of it’s arrival. And this time it was the cover shot that inspired this dessert….
PART ONE: Espresso Jelly/Jello – start with 2 satchels of gelatin dissolved in 2 tablespoons of water. Prep 2 cups espresso and add sugar to desired sweetness. Combine the hot espresso & gelatin until the gelatin dissolves .. let it cool a little then add into cups and let it set in the fridge [2 plus hours].
PART TWO: Chocolate Mousse – 200 to 250g of chocolate 1 cup of cream and 1/4 cup of liqueur of choice. Shove it all in one pot on medium heat until all is dissolved .. stir stir stir .. let it cool and then spoon over the jelly/jello.
PART THREE: Donuts – 1/2 pack of wonton wrappers, cut into strips and fried in oil until golden brown. Once they have cooled, sprinkle with powdered sugar & cinnamon.
PART FOUR: Cream – 1 cup heavy whipping cream, whipped until it just started to form peaks. I added a little powdered sugar to sweeten it just a little.
PART FIVE: Assemble & Eat – enjoy these rich and intensely flavored treats.
