15 Minute || Coddled Egg

I woke up this morning and felt like some eggs – but special eggs – so this is what we ‘coddled‘ together [pun intended].

I haven’t had ‘Coddled Eggs‘ in ages. We whipped these up in 15 minutes from start to finish, including making of tea, toast & fried tomatoes. All you do, is get some water boiling in a pot. While waiting for the water – in a mason bar – add slab of butter, crack and egg, add salt pepper and herbs whatever you like – we added thyme, green onions & creme fraiche.

Screw the lid on, add it to the water that is reduced to just under a boil, cook for 7-9 minutes. Serve with fried tomato & buttery toast soldiers for dipping.

Enjoy your gooey egg sauce for your toast. So delicious. This will be repeated again tomorrow : )

    I never thought of using the mason jars. Excellent ideal. I do love coddled eggs. Especially in the winter.
